A few weeks ago I found myself with an excess amount of egg roll wrappers. Sure, I could have bought items to make the the egg roll filling again, but instead I decided to make something up.
Why not?
So instead I filled some of the wrappers with cream cheese + dark chocolate, and some with cream cheese + honey. I folded them 'crab rangoon style' and fried them up. Then I sprinkled the tops with sugar, hoping to make them look more... uh... dessert like. ;)
I personally favor the chocolate ones.

Today I used leftover spaghetti sauce to make makeshift pizza with mushrooms on TJs Parmesan peppercorn bread, baked in the oven. Sounds gross, as I type it out..But, alas, it was delicious!

I found myself in the same predicament a few months ago, I used Nutella as the filling, cooked the same way. Divine.

Ooh, yum! I love making wontons, and I bet the leftover wrappers would be great like this.
My favorite random recipe was using a red bell pepper and some soy sauce and garlic to make a surprisingly delicious pasta topping.

That reminds me that I have extra egg roll wrappers in my fridge too! I'm not quite sure why they sell them in such large quantities.
