I had one lonely granny smith apple in my possession. I like to just eat apples raw, maybe with a bit of peanut butter. But granny smith is a little too tart for me, them is baking apples.
But I only had one. You can hardly bake an apple pie with only one apple. So I made two mini apple galettes. They smelled like autumn and they tasted delicious. I almost ate both, but the boyfriend beat me to the second one. Which was lucky for both of us I think.
For the crusts: 1 1/4 cups flour, 1/2 cup cold butter, 3-5 tablespoons cold water and a pinch of salt.
Blend flour, butter and salt in a bowl until crumbly. Slowly mix in water until dough forms. Wrap in plastic wrap and refrigerate for an hour. Then divide in two and roll out on a generously floured surface into two circles. Place rolled out dough on a baking sheet covered in parchment paper.
For the fillings: 1 large granny smith apple, 1/4 cup brown sugar and a dash of cinnamon.
Peel and slice up apple. Dip each piece into a bowl with the brown sugar and cinnamon combined. Place in the middle of the crusts and then fold up the edges. Bake at 350 F for 25-30 minutes. Serve warm with a little powdered sugar sprinkled over the top for showman ship. It's all about showman ship. :)

i made this today because i too, only had one granny apple. it was really good and surprisingly filling! (i thought half an apple and some crust would be a light snakck-ha!) yumminess.

I love this print and this poly blend is SO soft. Not as easy to work with since the cotton count is less but still fine. I HATE doing the rolled hem on little girl sleeves and necklines so here I made a cap sleeve and used some lace hem binding as the neck. Pretty! I did a button on the back seen here...
