I realized after I made up this recipe that it would be a really good dish to take to a party or on a picnic because it travels well. Travel time allows the mojito syrup to really marinate in to the fruit. And it was so yummy-I think mint is really refreshing.
Sliced up fruit (I used yellow watermelon, cantaloupe, peaches, and cucumbers)
1 cup water
½ sugar
2 TB finely chopped fresh mint
Slice up all your fruit and place in serving bowl, set aside. In a pan mix water and sugar until dissolved, bring to a rapid boil. Add in mint leaves and allow to boil over medium heat for one minute. Remove from heat and allow mint syrup to cool. Once cool, pour over fruit salad and serve. This salad must be enjoyed within 24 hours.

How have your peaches been down in So.Cal? Ours have been mostly rock hard and crappy! Your salad looks totally yummy, by the way. And I want to steal your pyrex. The end.
