4 eggs
2 Tb milk
2-3 medium bell peppers
½ a medium onion
2 Tb olive oil
Whisk together eggs and milk until almost fluffy, set aside. Slice up bell peppers and onion. Sauté onions in olive oil until lightly brown. Add peppers and sauté together; do not over cook the peppers. They should still be a little crisp. Remove onions and peppers from pan. In still hot pan add a little more oil and pour in egg mixture. Pull up sides once. Add peppers and onions before it completely sets. Fold in half and continue cooking for another minute or two, flip and repeat. Serve immediately. Makes two omelets.



This looks delish! I love red bell peppers.
