I have always had a sweet tooth. My family (especially my grandma, Corina) still tease me about how I just loved chocolate as a kid. I love desserts. I go jogging just so I can keep eating dessert. So I was in the mood to make something sweet, and hey why not sustainable;) I am calling this the End of Summer Cobbler. It is a variation on a recipe from Barbara Kingsolver's book Animal, Vegetable, Miracle and all of her recipes from the book can be found on her website at animalvegetablemiracle.com
3 cups strawberries
2 cups blueberries
1/3 cup honey
½ cup flour
1/3 cup oats
½ cup brown sugar
1/3 cup butter
1 ts cinnamon
Slice strawberries in half and place in a pie pan along with blueberries. Cover in honey and set aside. In a large bowl mix together flour, oats, brown sugar, butter and cinnamon. I simply mixed together by hand until crumbly. Spread over the berries. Bake at 350 degrees for 30 min or until deep purple.
The recipe from Kingsolver is actually called "Strawberry Rhubarb Crisp" which I had my mind made up to make. I hit a little snag over the rhubarb though. But I'll save my funny story about rhubarb for later.



My mother-in-law grows her own rhubarb and keeps it frozen for out-of-season
times.
